SALTA
is one of Argentina's largest provinces that is bordered by Chile, Bolivia, and Paraguay. The province is characterized by vastly diverse terrain such as the fertile valley of the capital, the polychrome canyons of Cafayate, and the desolate plateaus of La Puna.  Salta City is the capital of the province and has Argentina's best-preserved colonial architecture. The narrow streets and charming plazas of the city remain as quiet and gracious as they have existed for centuries.

   

El Tren a las Nubes ("The Train to the Clouds") is Salta's biggest attraction. Another legendary site in a town near Salta City is the Cerro de los Siete Colores ("Hill of the Seven Colours"). Salta is a very popular destination for tourists. There is a steady traffic of people going through the city on their way to and from Bolivia. There is also a great variety of lodgings at any price-range and the local entertainment is prepared to delight the visitor.

   

THE TOWN OF CAFAYATE

Close to Salta, wine-making takes place in Cafayate and is fueled by the perfect climate. These lands are the kingdom of the white emblematic Argentine varietal: The Torrontes. This cepage of uncertain origin that is only grown in Argentina gives rise to cool and elegant wines, with a captivating personality thanks to its floral and herbal profile, with a marked fresh grape taste.
 

Weather and Wine 

The sunshine and temperature both add to the successful maturity of each wine crop. Most of the year is complete with sunny days and mild temperatures. Throughout each day and night, the temperature fluctuates between 35 degrees, encouraging the grapes to develop a powerful and unique taste evident in the wines. In addition, the small amount of rain provides enough water to satisfy the grapes but not too much so that the grapes become oversized. All of these elements contribute to triumphant wine varieties including Torrontes, Cabernet Sauvignon, Malbec, Chardonnay, and Syrah.

  

Sunshine filters into the region for over 300 days per year while the average temperature is in the upper 60s. A dry atmosphere collaborate with the rivers and temperatures to create a space that encourages the growth of the Torrontes grapes as well as vines to produce Cabernet Sauvignon, Malbec, Chardonnay, and Syrah.

Where to Stay  

There are a number of hotels in Cafayate. A few hours away, the estate of Estancia Colome is located in the Calchaqui Valley. Some of the oldest wines find a home in this vineyard resort. Architecture at the Estancia Colome borrows from the Mediterranean tradition and collaborates with the natural wonders of nature. Take in the swimming, dinner, and a spa while tasting a bit of history in the wine that originated from France in mid 1800s.

Going through villages 2 miles on the way to Divisadero, Viñas de Cafayate Wine Resort is a large white colonial house, with patios shaped into galleries and ample balconies from its 14 rooms, all of them with view to the vineyards, the swimming pool or the San Isidro hill almost to its feet.
